Early in his career, Jimmy travelled to three different states of Australia to complete his chef apprenticeship. A desire to improve his culinary knowledge saw Jimmy travel afar to Europe and Asia where he worked in some fascinating kitchens and met some fantastic people.

A camping tour of Australia’s Kakadu National Park on Jimmy’s 30th birthday introduced him to the prospect of a career change. The lure of cooking over a campfire at night with a beer or wine in hand proved hard to resist. Jimmy has never looked back.
